What’s for Dinner?

Anna Thanks to my gorgeous niece Anna for these wonderful recipes.  She made them when we went to my granny’s last year.  We make them and think fondly of her.  Yummy.

Spicy Black Bean and Cheese Enchiladasbeans

  • 2/3 cup water
  • 1 (10 oz) can enchilada sauce
  • 1 package dry enchilada mix 1 cup
  • (4 oz) finely shredded cheddar cheese
  • 2 (15 oz) cans black beans, rinsed 
  • 2 T. sliced green onions (optional)
  • 1 cup light sour cream, divided
  • 8 (8 inch) flour tortillas

Enchiladas 1Preheat oven to 375. Stir water and dry enchilada mix in a 10-inch skillet. Add beans (and meat if you want it). Cook over medium high heat until the mixture boils, stirring occasionally. Reduce heat to low; stir 3-4 minutes until mixture thickens. remove from heat; stir in 1/2 cup sour cream. Place approximately 1/3 cup of bean mixture on center of each tortilla. Add a bit of the canned sauce and a sprinkle of cheese, roll up. Place rolled tortillas, seam down in 9×13 pan. Pour remaining sauce over and sprinkle the rest of the cheese on top. Cover with foil, bake at 375 for 15 minute. Remove foil and bake 3 minutes more. Serve with a dollop of sour cream and sprinkle with green onions.

* We are carnivores and I make ours with chicken… adding corn is delicious too.



Not Yo Mama’s Banana Pudding

  • 2 bags Pepperidge Farm Chessman Cookies (I use Nilla Wafers, they taste just fine and are cheaper)
  • 6-8 bananas sliced
  • 2 cups milk
  • 1 (5 oz) box instant French Vanilla Pudding (Vanilla works fine as well)
  • 1 (8 oz) package cream cheese, softened
  • 1 (14 oz) can sweetened condensed milk
  • 1 (12 oz) container of frozen whipped topping, thawednilla wafers

Line the bottom of a 9×13 inch pan with cookies and a layer of bananas on top. In a bowl, combine the milk and pudding mix and blend with a hand mixer. In another bowl, combine cream cheese and condensed milk and mix until smooth. Fold whipped topping into the cream cheese mixture. Add cream cheese mixture to pudding mixture and stir until well blended. Pour mixture over the cookies and bananas and cover with remaining cookies and bananas (I usually have some extra slices). Refrigerate until ready to serve and store in the fridge after serving.

    Thanks for the recipes. Black beans are one of my favorite foods no matter how they are prepared.

    Hi Jennifer! These enchiladas are looking delicious!!! Thanks for sharing the recipe! I have never made banana pudding before, so that’s looking good too!

    It all looks yummy. I was thinking I needed to actuall COOK tonight. It has been a while :). I may just try the recipe, with chicken added.
